Girse is a family-owned German manufacturer specialising in stainless steel outdoor fireplaces, barbecues, and cooking accessories, built to stay outdoors year-round and engineered for genuine open-fire cooking rather than just looking the part.
The Salmon Board hooks into the rail of your Girse fireplace and holds fish or meat upright next to the fire rather than directly over it, so it cooks gently at around 100°C without drying out — the classic method for indirect “flame salmon”. The same board works just as well for meat or vegetables prepared the same way. Look for small pearls of white albumen forming on the surface as the sign that salmon is cooked through, and always soak the board in water for at least two hours before its first use — marinated food isn't suitable for this method, since the marinade will simply run off the upright board.
